Soap works because its molecules are two-faced: one end loves water, the other end hates it and loves oil. The two-faced molecule

Each soap molecule is a long carbon tail (hydrophobic — repelled by water, drawn to oils) capped with a charged head (hydrophilic — happy in water). Water alone beads off grease because the two won't mix; soap is the diplomat that speaks both languages.

The micelle round-up

Above a threshold concentration, soap molecules team up into spheres called micelles: tails pointing inward, heads facing out. Rub soap on greasy skin and the tails burrow into the oil film, break it into droplets, and lock each one inside a micelle — an oil core in a water-friendly shell.

The rinse

Because micelle shells are charged and water-loving, the rinse water carries the whole package away — grease, trapped dirt, and the microbes living in the oil film. That's why lather and rinse matter more than water temperature: no micelles, no kidnapping.

Why doesn't plain water clean grease?

Water molecules cling to each other and won't mix with oils, so they slide over a grease film without lifting it. Soap bridges the two: its tail bonds the oil, its head bonds the water.

Is antibacterial soap better than regular soap?
