How does a thermos know to keep drinks hot or cold?

A thermos doesn't sense anything. Heat only flows from warm to cool, and the vacuum-walled bottle blocks that flow in both directions — so warmth can't leak out of coffee or sneak into lemonade. One passive design, both jobs.

It doesn't know. There is no sensor, no switch, no hot mode or cold mode — a thermos is a completely passive device, and the trick is that it doesn't need to be anything else. Heat only ever flows one way: from warmer to cooler. If your coffee is hot, heat tries to leak out into the room. If your lemonade is cold, the room's heat tries to leak in. A thermos simply blocks the flow, and a blocked road is blocked in both directions.

Unscrew a thermos in your mind and you find a bottle inside a bottle, joined only at the neck. The gap between them is pumped down to a near-vacuum. That single detail defeats two of the three ways heat travels. Heat moving by direct touch needs matter to pass through, and heat carried by circulating air needs air to circulate — remove the air and both routes vanish. The third route is radiation, the same invisible warmth you feel from a fire across the room. Against that, the inner wall gets a mirror-bright coating that bounces the rays back where they came from: back into a hot drink, back out toward the room for a cold one.

Nothing insulates perfectly. The two walls have to touch at the neck, and the stopper is solid material a little heat can crawl through — which is why most of the loss happens at the top, and why a drink that should last all day won't survive a lid opened every ten minutes. The gap between drink and room also matters: steaming coffee sits much further from room temperature than iced water does, so it loses ground faster. That's why the same steel bottle is often rated around 12 hours hot but 24 hours cold.

As designed, 1892

The design hasn't fundamentally changed since James Dewar built the first vacuum flask in 1892 — not for picnics, but to keep liquefied gases cold in his lab. He never patented it. Two German glassblowers did, founding the Thermos company in 1904 and pointing the same hardware at hot coffee. Same drawing, both jobs: no intelligence required, just three heat routes closed off with one elegant wall.
