Popcorn pops because each kernel is a sealed pressure cooker. Its hard shell traps about fourteen percent moisture inside a starchy core; heat turns that water to steam, pressure climbs to roughly ten atmospheres, and at about 180°C the shell fails. The starch flashes into foam and sets solid — that white cloud is the explosion, frozen.

Popcorn is the only common grain with a pericarp — the outer shell — strong and tight enough to hold serious pressure. Other corn varieties leak steam and merely dry out. In popcorn, the trapped water superheats far past its normal boiling point because it has nowhere to go.
The half-second of the pop
When the shell ruptures, pressure drops instantly. The superheated, gelatinized starch expands about forty times in volume, cools in the same instant, and sets into the light foam you eat. The jump and the pop sound come from that same violent release.
Why some kernels never pop
Duds aren't underheated — they're leaky. A cracked or scratched shell lets steam escape quietly, so pressure never builds. No seal, no bang.

Why doesn't regular corn pop?
Its shell is too thin or porous to hold pressure. Steam escapes gradually, so the kernel dries and hardens instead of exploding. Popcorn is a variety bred for an exceptionally tight, strong hull.
Why do kernels burn if you keep heating them?
Once popped, the foam is dry starch with huge surface area — it scorches quickly. And the last unpopped kernels sit in oil that keeps getting hotter while the popped ones shield the sound of your cue to stop.
Does soaking old kernels make them pop better?
Sometimes, slightly. Old kernels that dried below the ideal moisture level can regain a little water after a soak and a careful re-dry — but a damaged shell can't be repaired, and that's the more common cause of duds.
