In northern China this is a feature, not a defect: Laba garlic is deliberately pickled in rice vinegar starting on the Laba festival, and cooks wait roughly three days for the cloves to turn a prized jade green. If you want the opposite outcome, start from warm-stored garlic or blanch the cloves briefly to disarm the enzyme before they hit the brine.

Inspection notes: when to actually worry

Color alone passes inspection — blue, green, or patchy versions of either. The real reject flags are the ordinary spoilage ones: an off or moldy smell, visible fuzz, sliminess, or a bulging lid. And the one genuine garlic hazard, botulism, comes from storing raw garlic in plain oil at room temperature — a different setup entirely. A properly acidic pickle is exactly the environment that keeps that risk drawn out of the plans.
