A microwave does not really reheat pizza — it steams it from the inside out. The machine's magnetron — the tube that makes the waves — broadcasts energy tuned to shake water molecules, so the wettest parts of the slice heat first: sauce, cheese, toppings. That water boils into steam, the steam drifts to the coolest dry surface on site, and that surface is your crust. The bread does what bread does best — it absorbs. Sixty seconds later the base that once crunched now folds like a damp napkin.
The heating spec
A proper oven works from the outside in: hot dry air toasts the surface, drives moisture off, and keeps the crust drier than the interior. The microwave inverts the drawing. Its waves pass through the dry crust almost untouched and dump their energy where the water sits. Steam production begins in the toppings within seconds, while the crust itself barely warms. Worse, wet heating has a hard ceiling: boiling water and steam top out around 100 degrees Celsius, far below the dry-oven temperatures that make a surface crisp and brown. The microwave physically cannot re-toast the base — it can only wet it.
Moisture routing
Follow the water on the drawing. Stage one: waves agitate water in the sauce and cheese, and it vaporizes. Stage two: the steam has nowhere useful to go — the air inside the oven cavity stays relatively cool, so vapor condenses on the nearest cool body, which is the bread. Stage three: the crust's starch network, dried and set during the original bake, drinks the condensate back in and slackens. The structure that carried the slice is now waterlogged. And as the slice cools, the redistributed starch stiffens again — which is why microwaved crust goes soggy first and leathery-tough ten minutes later.
Rework procedure
The fix is dry, direct heat applied to the base. A skillet on medium with no lid bakes the water back out of the bread while the top warms through. A hot oven tray does the same on all sides, slower. If the microwave is the only tool on site, place a glass of water beside the slice — it absorbs a share of the waves, so the pizza heats more gently and sheds less steam into its own foundation. But treat that as a field patch, not a redesign: by construction, a microwave is a steamer. The crust was never in its scope of work.

The steam that soaked in dissolved and shifted some of the crust's starch. As the slice cools, that redistributed starch sets again in a denser arrangement — soggy while hot, leathery once cool.
