The green itself is innocent — it's chlorophyll, the same pigment that colors every leaf, and it's tasteless and harmless. The trouble is what the green tells you. A potato is an underground storage organ; it's built to sit in the dark. Expose it to light — a sunny garden bed with thin soil cover, a supermarket shelf, your kitchen counter — and the tuber switches into leaf mode. It starts making chlorophyll on the surface, and in parallel it ramps up production of solanine — the potato's bitter defense chemical, brewed to punish whatever is trying to eat it. Two separate builds, one shared trigger. The green is the visible one; the bitter one hides underneath.

Where the defense chemical sits

The load is not spread evenly. Measurements by Oregon State University Extension put green potato skin at 1,500–2,200 milligrams of these compounds per kilogram, while the green flesh underneath reads far lower, around 250–280. The FAO/WHO safety ceiling for fresh potatoes is 200 milligrams per kilogram — so green skin can run seven to ten times over spec while the pale interior stays close to the line. That distribution is your repair plan: peeling away a generous 1.5 millimeters or so of skin removes most of the compound, and cutting out any green or sprouting patches removes the rest of the hot spots.

Why cooking doesn't fix it

Solanine is heat stable. Boiling a green potato barely reduces it; even high-heat frying only cuts a portion. The kitchen operations that work are mechanical, not thermal: peel deep, trim green, discard sprouts. There is one built-in alarm working in your favor — at levels well above the safety ceiling, the compound tastes noticeably bitter and can leave a burning feel in the mouth. That's the tuber telling you the trim job failed.

The pass/fail call

A potato with a light green patch passes inspection after rework: peel it deep, cut the green away, cook it normally. A potato that is green through and through, heavily sprouted, or bitter after peeling fails — scrap it. The dose that causes symptoms in people is real but takes effort to reach, and the bitterness usually stops anyone before they get there. Prevention is cheaper than rework: store potatoes dark, cool, and dry, and the greening sequence never starts.
